WE HAVE A MENU!!!!!
Revised and fine tuned 
but as near to finished as we can at this point!!
AND IT MEETS our criteria 
from non soy soy sauce to oat flour breads!!! 
yea!!
would LOVE some feedback!


WEDDING Tea MENU

At EACH Guest table:

 Surrounding Vase in center of table
Hard boiled eggs
Fruit Selection Grapes Cuties & Blueberries
Each place setting:      1ea Oat Zucchini Bread Muffin
                                    1ea Pumpkin Oatmeal bread cupcakes
                                    2oz Hummus with vegetable sticks  

AT the BUFFET:

BUFFET Serving TABLE: each food item to be pre-plated and available to add to guests tray/plate as they walk the length of the serving table(s)

Menu:
4oz  Sunomono (Japanese Cucumbers)

4oz  Danmuji (Korean Diakon radish/carrot)

6oz Turkey /Spinach Salad w/Sundried Tomatos, Kalamari Olives, Feta Cheese & Sunflower Seeds


Table 2: condiments – choices of Salad Dressings, Soy free Soy Sauce, Salsa
Table 3: Drink station – Hot Water for hot tea, Coffee, Ice Tea, Lemonade

Oat flour Revist and modified menu

tried two recipes using oatflour in one and oatmeal in the second and SUCCESS
tho the second looked a bit funky even the picky eaters seemed to think it ok.. needs something more tho - stronger flavors of maple and added raisons i think

the oatflour one was a huge success tho!!!!! zuchinni bread with oatflour! yea
YEA!!

we did a taste test/ presentation test gathering of bride/groom and several wedding party members yesterday -- enjoyed the dishes, critiqued them and now i am fine tuning what we discussed..
but we APPEAR to have a menu!!!

WHOOO HOO!!

WEDDING RECEPTION TEA!!!
3 presentation stations to be needed
Station one: Beverages  - 
depending on what equipment is available at site - coffee tea and lemonade & Ice water

Station two: food buffet
trays/chargers to carry food to seating tables
Individual containers for each food item presented:
Meat presentation - either as salad or rice paper spring roll or ???- 6 oz
V8 Aspic- 4oz
Sunomono - japanese cucumber dish 4oz
Daikon/carrot Korean pickle 4oz
Korean stir fry potato/sesame oil 4oz - am considering dropping this one
Hummous with veggie sticks - 2 oz lots of veggies
NEED FRUIT DISH
NEED meat or BEAN or something similar side DISH

Station three - Condiment table
assorted condiments and salad dressings

AT DINING TABLES:one each per person
silverware holders
tea dyed hard boiled eggs
 muffins /breadcakes

oat flour retry

i want to create a bread of some sort and am a most Stubborn soul..

now i have an oat flour crepe recipe..
one might think this would be something even i cannot screw up..

oh bother.. the oatmeal bread is a flat out bust..

even when i made it to the original directions it still SUCKED.. (maybe not quite as bad as the first 2 tries but still did NOT taste good at all. not even a little bit.. tried the original steel cut oats, tried regular oats and even tried with oat flour..

HOWEVER i will say that YES there is such a thing as goats milk Yogurt. by way of Clarks nutrition here locally..
still is frustrating - even the oatmeal cookies i made came out the texture of a muffin rather than a cookie and the gr kids only sort of liked them..

that is NOT high praise from the bottomless pits...


now i find any recipe i see i mentally run down the list of how i can substitute - its amazing how easy THAT part has become..
so today's interesting exercise has been this recipe (i LIKE lemon cake lol)

there are 2 ingredients that are to be looked at - flour and butter..
the butter has two possibilities - either butter flavored vegitable shortening or goats milk butter.. the strength of the Lemon should easily conteract the stronger goats milk taste.
that should work.
and the flour..
before getting to a flour substitute - note in the recipe its a basic white cake with lemon filling & lemon frosting. one CAN add lemon to the cake mix if one wants to..

so i went exploring and found THIS: Bobs Red Mill Vanilla Cake Mix - claims to be both wheat free and dairy free. sounds good. and this is getting to be VERY INTERESTING.. i go to this one site and 
its advertised at I HERB for $2.92 https://www.iherb.com
and sold at Amazon from $4.95 to 51.57(thats $4.30 ea x pack of 12 and $30.99 shipping) 
yikes.

now where i live our closest store carries a LOT of bobs red mill and they seem to average between 4-5$ so i can check if i can get this there..
might be fun to try...

The ELUSIVE BREAD....

sigh..

i am a bread freak. a bread a-holic, a bread aficionado..
so to me ANY menu must have bread or not be complete..

yea, about that.. (that noise you hear is me banging my head on my desk)... Frustration rules the day.. i found the PERFECT wheat flour substitute and it didnt suck for taste or consistency... only to realize its Tapioca based.. erggh..

so i went on an alternative bread recipe binge.. did you know that there is either Tapioca or Cornstarch in every one i found of premade mixes??

so i started hunting on google and pinterest.. and tried a few.. - lets just say the less said the better on THOSE subjects.. the breads were either inedible or just disgusting. cloud bread was "ok" at best but MUST be eaten same day.. next day was pretty awful...

today tho i found an IRISH oat bread recipe.. its perfect..

well, except for one eeensy weeensy little problem.. the yogurt in the recipe..

now i know i cannot use cows milk or soy yogurt. and i cant make yogurt from nut milks or coconut milk.. i dont actually know if you cant make it from them, i cant USE them in the menu.
so that seems to leave goats milk and rice milk..

CAN one make yogurt from these?? does someone Else make yogurt from these??

and by the way ONE site that is all things goat milk says you use cows milk for yogurt starter. we CANNOT do that ;(

THE END GOAL.. Ramblings of a convoluted mind:

the End GOAL of the Menu:
that the guests have a meal of  Rich, Savory, Sweet, Salty foods of various textures colors and scents that satisfy both the eye and the palate and that NO one feels deprived or excluded because of a food allergy..

well, the OBVIOUS answer is to feed 150 guests/family a reception tea that all enjoy
And no one ends up in er..
(the latter isnt USUALLY on the first sentence but with the extent of food allergies...it is an issue)

And as i have been puttering with the menu, READING LABELS up the yahoozy and STILL not finding an Edible (my opinion here) bread product that has NONE of the allergy triggers, it dawned on me, we really didnt have a stated focused goal for the meal 'Except" just to feed people.

gahhhh.. that just not good enough..
if THAT were the only goal we could just serve clear broth, a salad and water. done finito...

so..

that would be a cop out and a failure.. (granted it IS cheap on the budget!!lol)
but it is NOT the point

so back to the menu.. the entire tea could EASILY be ONLY salads.. and i suppose thats not a 'bad' thing.. i have recipes for Incredibly interesting salads. & hope to use at least 2. but theres no balance. it feels 'unfinished.

a note on the one thing i have NOT focused on....While there may be a vegetarian or two in the group that is the ONE thing we are not being specific for.. Vegetarians for the most part are very capable of picking & choosing their food preferences so we feel confident we dont have to "Worry" as they will have a good number of choices for them to pick from..

Examples of the kind of choices & what i mean:

Everyone knows jello. & most have had it In SOME flavor or another. plain or with stuff in it.. look at the old standbys that families love at the holidays.. & to be honest many of them are rather boring and trigger a large number of allergies & one would think them unusable..
but.....

picture a small bowl of savory vegetable tomato aspic with a side of salty calamari olives..

or of deep bone broth rich gelatin served on spinach leaves with jicama sticks

or rice paper spring rolls with crisp vegetables & pressure cooked turkey slices /with non soy sauce dipping sauces like spicy mustard & sweet & sour..

a small plate of handmade cream mints as well as pieces of home made fudge

and you begin to see where i am trying to go with this.. ALL of these dishes i listed are allergy free.. (from OUR list of allergies)
